German "Puffy" Pancakes

Ingredients

  • 3 eggs whisk with wire whip
  • smidgen of salt stir in
  • 1/2 cup flour add in 3 portions, whisking til smooth after each addition
  • 1/2 cup milk add in 2 portions, whisking til smooth after each addition
  • 2 tbsp melted butter stir into above batter
  • splash of vanilla
  • dash of cinnamon optional

Instructions

  • HEAVILY butter 2 6-8 inch iron skillets, 1 larger iron skillet, pie plates, or some equivalent bakeware.
  • Preheat oven to 450.
  • Pour batter into bakeware (dividing evenly if you use 2 containers).
  • Bake at 450 for 10 minutes, turn down temp to 350 and bake an additional 5 minutes. Serve with fresh fruit, powdered sugar, whipped cream, cooked apples, etc.

Notes

My German Pancake recipe doesn't include sugar, so you can sweeten with toppings to your liking!
